Banana Brownie Skillet

Ingredients:

  • 1 cup semisweet chocolate pieces
  • 2/3 cuo buckwheat flour
  • 2/3 cup sugar or sugar substitute
  • 1/3 cup non-fat dry milk powder
  • 1/3 cup unsweetened cocoa powder
  • 1 tsp ground cinnamon
  • ½ tsp baking soda
  • ¼ tsp salt
  • 2 egg whites, lightly beaten
  • 1/3 cup buttermilk
  • 1 tsp vanilla
  • nonstick cooking spray
  • 1 large banana, sliced
  • powdered sugar (optional)
  • 4 cups sliced fresh strawberries (optional)
  • 1 8 ox container frozen light whipped dessert topping, thaw (optional)

Directions:

  1. Stir together chocolate pieces, buckwheat flour, sugar, nonfat dry milk powder, cocoa powder, cinnamon baking soday and salt in a large bowl. Make a well in the center of the flour mixture.
  2. Stir together egg whites, buttermilk and vanilla in a separate medium bowl. Stir until everything is combined.
  3. Coat lightly an 8-9 inch cast-iron skillet with nonstick cooking spray.
  4. Spoon batter into prepared skillet of foil plan.
  5. Arrange banana slices on top.
  6. Arrange medium coals around the edges of the grill. Test for medium-low heat in the center of the grill.
  7. Place pan on the grill rack in the center of the grill
  8. Cover the grill for 30 minutes or until the edges start to pill away from the sides of the skiller or pan.
  9. Cool for 30 minutes. Serve warm.

Coffee-Chocolate Marble Cake

Ingredients:

  • 2 ½ cups sifted cake flour
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 ¼ cups buttermilk or sour fat-free milk
  • 1 ¼ cup granulated sugar ir sugar substitute blend
  • ½ cup canola oil
  • ½ cup refrigerated or frozen egg product, thawed
  • 2 tsp vanilla
  • 1/3 cup unsweetened cocoa powder
  • 2 tbsp instant espresso coffee powder or instant coffee crystals
  • 1 coffee drizzle
  • 2 tsp powdered sugar

Directions:

  1. Preheat oven to 350 degrees F.
  2. Grease and lightly flour a 10-inch fluted tube pan. Set aside.
  3. Set aside ½ cup of flour.
  4. Combine the remaining 2 cups cake flour or 1 ¾ cups all-purpose flour, baking powder, baking soda and salt in a large bowl.
  5. Whisk together buttermilk, granulated sugar, oil, eggs and vanilla in another large bowl.
  6. Add buttermilk mixture to the flour mixture.
  7. Beat mixture with a wire whisk just until combined.
  8. Combine cocoa powder and espresso powder in a medium bowl. Add half of the buttermilk mixture and stir until smooth. Set aside. Add the reserved ½ cup flour to the remaining buttermilk mixture. Whisk until combined.
  9. Spoon half of the white batter evenly into the pan. Spoon half of the chocolate batter carefully atop the white batter in pan in an even layer.
  10. Bake for 35 minutes or until toothpick inserted near the center comes out clean.
